Not only are some oils healthier than others, but some lose most of their nutritional value and can even become toxic when cooked at high temperatures. A higher smoke point, which sunflower oil, coconut oil, or avocado oil each have, is needed for an oil to be a good oil for cooking. If you buy pure, organic varieties of these oils, you can cook with them safely. You should avoid unhealthy oils such as ordinary vegetable oil, or any type of oil that says "partially hydrogenated," as these contain trans fats, the unhealthy type of fat.
