Vegetarian Recipes: Find What You Must Know

by Eddy Vong

If anyone is looking for an authentic Indian taste in their platter then Southeast Asian vegetarian recipes are the appropriate recipes they should have as their meals. They are simple to cook and fresh vegetables are the most important ingredient. A good sauce is a great place to start.

To prepare this meal, one needs to have very basic ingredients in hand. You need to have one tablespoon of sunflower oil, 50 grams of chopped onion, 2 tablespoons of Madras curry powder, 1 heaped teaspoon of tomato puree with 150ml of red wine, 120ml of water, 1 piece of bay leaf and pinch of salt, pepper, sugar with lemon juice, mango chutney.

The oil should be heated and the onion added until transparent. Next is the curry powder and tomato puree, which are cooked for a few minutes. Once cooked, add the other ingredients, and simmer for 10 to 15 minutes. Once cooked, it should be strained through a sieve and cooled.

Making of an ideal dish needs something extra. Good presentation with apple and celery salad gives another dimension to this dish. To prepare this you need to have 2 granny smith apples, 4 celery sticks, 1 tablespoon of plump sultanas with lemon juice and 150ml of double cream.

Peel and cut apples like match sticks. Cut celery sticks in the same way. Mix apples, celery sticks and lime juice in a bowl and refrigerate it for half an hour. Add double cream and the sauce made earlier before serving.

Another great use of the sauce is to add it to cauliflower cheese dish. The ingredients are simple; 1 cauliflower cut into florets, 30g of butter, half a teaspoon of cumin seeds, 1 pinch of chili powder, 300ml of milk, 50g of plain flour, 1 teaspoon of English mustard, 125g of grated cheddar cheese and 1 finely chopped green chili.

Preheat the oven to 180C. Boil the florets for 5 minutes and after that drain them out. On a pan, add butter, cumin seeds, chili powder, milk and flour and mix all these items well. They should be thoroughly blended with the heat reduced.

After cooling down the pan, add cheese mustard and the sauce prepared earlier. Combine them well and put a little amount of that mixture on ovenproof dish with the added cauliflower. Put the rest of the sauce on and sprinkle with cheese. Bake in the oven until golden and serve.

These Southeast Asian vegetarian recipes are just a couple of suggestions of course, but the basic curry sauce can be used as a base for a myriad of options. Enjoyable any time of the day, you will keep coming back for more.
